Traditionally, stir-fried rice in China is prepared with a pot and a big stove that can generate intense heat. Fierce heat is an unfair and important element, most Asian chefs agree to produce excellent Chinese fried rice. Fierce heat can create enough remembrance which is a Chinese phrase meaning "flavor, taste," essence "given in hot pots for food.
The problem that we faced at home in the West is that the average stove at home is too small to generate the intense heat needed for stir-fry. Many people try to duplicate recipes to disappoint the results of the small stove they have. This washed version of fried rice is certainly far from the restaurant standards they want to achieve.
Why is intense heat indispensable for stir-frying?
The intense heat induces a chemical reaction that calls the Maillard reaction during dry heat cooking including stir-fry to produce a unique flavor of stir-fried and can only occur at a minimum temperature of 310 ° F. Induces specific chemical reactions in food during heavy heat frying pan. This chemical reaction creates a unique scent familiar to you from well-prepared Chinese fried rice. This is also the same chemical process that happened in the oven, and intense heat turns humble fabric into a palatable cake and pie.
Many different flavor compounds are made on the way. These compounds are then broken down to produce more flavor compounds. Flavor compounds made by Maillard reaction with various kinds of foods such as meat, onion, fish and the like are broken down by the high heat into chemical components of different ingredients that respect their unique flavor.
The challenge we face is that the stoves commonly used in Western homes are too small to achieve such high heat. The perfect solution is to use non-stick pan!
How to use non-stick pan to make excellent Chinese fried rice
This is an easy way I tested using non-stick bread to make Chinese fried rice in a small pot:
- Instead of using traditional Chinese pots, please get non-stick pan. Please work with a little big bread as you have to throw the ingredients into the bread.
- Instead of reversing the ingredients in the pot using a wok shovel, use a wooden spatula to avoid scratching the surface of non-sticky bread.
- Please heat the bread as much as possible before adding ingredients to the bread.
- Adjust the heat to the maximum level of the small stove throughout the stir-frying process. (By contrast, using a large stove, it is necessary to use less than half the time harsh heat).
Why is non-stick bread not normal bread?
Among the problems of stir-fry under high heat is that the ingredients tend to adhere to the surface of the pan. You can always avoid ingredients by stir-frying, but if you increase the amount of oil and lower the heat, fried rice will definitely be too greasy and less flavorful.
Non stick pan is a perfect choice because you do not have to worry about the problem of stickiness due to high heat. In addition, the low oil content means that the dish is more healthy.
So, next time, if you want to prepare deep-fried rice in China with a small stove in the house, please use non-stick pan. You will be amazed at how much you can achieve with it.
Chinese fried rice made with non-stick bread is wonderful, but there is a little taste that it was made in a fried way rather than a fried way. If you really want to make authentic fried rice, you probably probably still need a big pot and stove,
But, when it is good Who cares when it's genuine? So head to your kitchen and try this dish by applying this new method. Hottie stir fried!
